This delicious winter pudding from Heleen Meyer, is perfect to warm your heart and soul! Heleen says she can clearly remember the first time she tasted a version of this baked buttermilk pudding, many years ago. It made such an impression, that she published the recipe in her first recipe book, Onthoukos (later translated to Food from the heart). A few years later, she added the tangy berry sauce, but look at the other serving suggestions she gives in the last step of the recipe.

This is a quick and easy dessert and just what you will want for a cold day. The delicate and velvety buttermilk and the slight tartness of the berries are indeed a special combination.

 

Buttermilk pudding with a berry sauce

Recipe from Food from the heart by Heleen Meyer

Serves 4 – 6

100 ml (100 g) butter

200 ml (160 g) sugar

3 extra large eggs

250 ml (140 g) cake flour, sifted

10 ml (2 tsp) baking powder

5 ml (1 tsp) vanilla essence

2 ml salt

1 litre (4 cups) buttermilk

 

Berry sauce

250 g frozen mixed berries, thawed

75 ml (5 tbsp) castor sugar

5 ml (1 tsp) finely grated lemon rind

15-30 ml (1-2 tbsp) lemon juice, or to taste

 

  1. Preheat oven to 180° C. Lightly grease a shallow, 2 litre oven-dish, with butter.
  2. Beat butter, sugar and eggs together and then beat in the rest of the ingredients until well blended.
  3. Pour mixture into the greased dish. Bake for 45 minutes or until set and light golden brown on top. If the pudding becomes too brown before it is cooked, lightly cover it with foil and bake until cooked.
  4. Berry sauce: Mix all the ingredients together with a stick blender until smooth. Pour into a small saucepan, and bring to just below boiling point, while stirring continuously.
  5. Serve the berry sauce warm or at room temperature with the warm pudding. Alternatively, the pudding can also be served with any seasonal fruit, like citrus wedges, granadilla pulp or gooseberries. If preferred, a drizzle of runny honey will be delicious too.
